Mael, 34, is a French Chef who was raised in Brittany and lives and works in Paris. His experience as a chef has brought him everywhere from Michelin star restaurants to the set of a French television show where he worked as a culinary assistant. Mael also has a degree in history and sociology from the University of Rennes. Married to an American, he speaks fluent English and loves to share his knowledge of the history of Paris and French gastronomy with foreign travelers. In the morning, “baguette” or “croissant”?

In the morning I have "tartines" with fresh baguette, salted butter, marmelade, and a croissant too!

"Bon appétit bien sûr!"

Give me a trick to make a Parisian waiter smile?

To make a waiter smile, ask for "un café allongé mais debout au comptoir"!

Favorite “Apero” spot?

"Les folies" au metro belleville, and "le petit bar" rue Oberkampf.

“Disagreeing” is A philosophy in France. Do you agree with that ?

Best french dinner should be : good meal, good wine , good bread and a passionate debate. Burgundy or Bordeaux?

For wine I prefer to drink Burgundy, but for holidays Bordeaux is near the beach so it wins hands down.

What’s your favorite place in France? Outside Paris of course.

My favorite place in France is "le golfe du morbihan" in Brittany. And the islands : Belle-île-en-mer, Hoedic, and the island of Groix, by sailing.
